Maple Bourbon Mini Cheesecakes

Maple Bourbon Mini-Cheesecakes 8 oz package cream cheese 5.2 oz package Boursin Maple Bourbon Gournay Cheese 1/2 cup sugar Punch of salt 1 teaspoon vanilla extract 1 egg Preheat oven to 350 degrees Place muffin papers in muffin pan Fill with the cookie or cracker crust of your choice (I used crushed dark chocolate/ sea salt coconut macaroons) In a bowl mix cheeses, vanilla, sugar, and salt with hand mixer until all lumps are gone. Add egg and beat through mixture for a few seconds. Fill mixture by spoonfuls into cups over crust. Bang on counter to even out filling. Place in oven and heat for 15 minutes at 350. Turn off oven and leave cups in for one hour. Take out and cool for an additional hour, then refrigerate for 6 hours or more. Add fruit and whipped cream topping before serving if desired.
